Pimento Cheese Deviled Eggs
This keto friendly recipe is so good there is sure to be one missing before you serve them at your next get together!
6 hard-boiled eggs, peeled
3 TBSP mayonnaise
1 tsp hot sauce
1/8 tsp sea salt
1/4 cup shredded extra sharp cheddar cheese
1 oz pimentos, drained and chopped
1/2 green onion, finely chopped
Paprika, for garnish
Cut eggs in half length-wise. Transfer yolks to a medium bowl and mash with mayonaise, hot sauce, and salt until almost smooth. Stir in cheddar, pimentos, and green onion. Drop by spoonful into the egg whites. Garnish with paprika and more green onion for color. Serve immediately or refrigerate, covered in plastic, up to one day. Enjoy!
